In a medium-sized bowl, combine the cornmeal, self-rising flour, low-fat buttermilk, and egg. Mix well until the batter is very moist but not too thin or soupy.

Heat 3 tablespoons of oil (coconut oil or your preferred type of oil) in a skillet over medium heat.
