Donut Grilled Cheese (Print version)

A sweet-salty grilled cheese made with glazed donuts, sharp cheddar, and a low skillet heat for a crisp caramelized crust.

# Ingredients:

For the sandwiches

01 - 2 plain glazed yeast donuts
02 - 4 slices sharp cheddar cheese, about 3 oz (85 g)
03 - 2 slices American cheese, about 1.5 oz (43 g)
04 - 1 teaspoon Dijon mustard
05 - 1 tablespoon unsalted butter, divided
06 - Pinch kosher salt
07 - Pinch black pepper

# Instructions:

01 - Slice each glazed yeast donut in half horizontally like a bagel. Keep the halves as even as possible so the sandwiches brown evenly.
02 - Spread a very thin layer of Dijon on the cut side of each bottom donut half. Add 2 slices cheddar and 1 slice American to each, then close the sandwiches.
03 - Place a heavy skillet over medium-low heat and melt half the butter. The butter should foam gently without browning hard.
04 - Add the sandwiches and press lightly with a spatula. Cook for 2-3 minutes until the bottom is deep golden and lightly crisp.
05 - Add the remaining butter, flip carefully, and cook 2-3 minutes more until the second side is golden and the cheese is fully melted.
06 - Transfer to a cutting board and rest for 1 minute. Slice in half and serve warm while the glaze is crisp and the cheese is soft.

# Good to know:

01 - Best served immediately after cooking.
02 - Use medium-low heat so the donut glaze caramelizes without burning.
03 - A plain glazed yeast donut gives the best texture.
