# Ingredients:

01 - 2 pounds red potatoes, peeled and diced
02 - 8 slices bacon
03 - ½ onion, diced
04 - 3 cloves garlic, minced

→ Seasonings

05 - ½ teaspoon dried thyme (or 2 sprigs fresh)
06 - 1 teaspoon kosher salt
07 - ½ teaspoon black pepper

→ Liquids & Dairy

08 - 2½ cups chicken broth
09 - ⅔ cup heavy cream
10 - 1 teaspoon cornstarch
11 - 1 cup shredded cheddar cheese
12 - ½ cup sour cream

→ Garnish

13 - 3 green onions, thinly sliced

# Instructions:

01 - Cook your bacon until nice and crispy. Save those tasty drippings!
02 - Use those bacon drippings to cook your diced onion until soft and translucent.
03 - Toss potatoes, garlic, thyme, salt, pepper, and broth into your slow cooker.
04 - Let it cook until those potatoes are tender - 4 hours on high or 6-8 on low.
05 - Take your immersion blender and blend about half the soup for the perfect texture.
06 - Mix cream with cornstarch, stir into the soup along with cheese, sour cream, and bacon. Cook on high 15-20 minutes more until it's thick and creamy.
