# Ingredients:

For the steak bites

01 - 3 lb (1.36 kg) round steak, stew meat, or chuck roast, cut into 1-inch pieces
02 - 1 teaspoon kosher salt
03 - 1 teaspoon black pepper
04 - 1 tablespoon olive oil, optional for searing
05 - 1 small yellow onion, diced
06 - 4 cloves garlic, minced
07 - 4 tablespoons (56 g) unsalted butter, cut into pieces
08 - 1 cup (240 ml) low-sodium beef broth
09 - 1 tablespoon Worcestershire sauce

Optional thickener

10 - 1 tablespoon cornstarch
11 - 1 tablespoon cold water
12 - 2 tablespoons chopped parsley, for serving

# Instructions:

01 - Cut the beef into even 1-inch pieces. Toss with kosher salt and black pepper.
02 - Heat olive oil in a skillet over medium-high heat. Brown the beef in batches for 1-2 minutes per side, then transfer it to the slow cooker. Skip this step for a dump-and-cook version.
03 - Add onion, garlic, butter, beef broth, and Worcestershire sauce to the slow cooker. Stir gently so the beef is coated.
04 - Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is fork-tender.
05 - For a thicker sauce, stir cornstarch and cold water together until smooth. Add it to the slow cooker during the last 20-30 minutes and cook until slightly thickened.
06 - Taste and adjust salt and pepper. Sprinkle with parsley and serve the steak bites with plenty of broth over potatoes, rice, noodles, or vegetables.
