Cheesy mashed potato bites, coated in breadcrumbs and fried to golden perfection for a savory snack.

# Ingredients:

→ Potato Mixture

01 - 480 g mashed potatoes, preferably chilled leftovers
02 - 110 g cheddar cheese, shredded
03 - 25 g Parmesan cheese, grated
04 - 1 large egg, beaten
05 - 0.5 teaspoon garlic powder
06 - 0.5 teaspoon onion powder
07 - Salt, to taste
08 - Freshly ground black pepper, to taste

→ Coating and Frying

09 - 60 g all-purpose flour
10 - 1 large egg, beaten
11 - 100 g breadcrumbs
12 - Olive oil, for shallow frying

→ Finishing

13 - 2 tablespoons fresh parsley, finely chopped

# Instructions:

01 - In a large bowl, blend mashed potatoes, cheddar cheese, Parmesan cheese, one beaten egg, garlic powder, onion powder, salt, and pepper until thoroughly combined.
02 - Shape the mixture into small balls, approximately 2.5 to 4 centimetres in diameter, ensuring consistent size for even frying.
03 - Place flour, additional beaten egg, and breadcrumbs into separate shallow bowls to arrange an efficient coating assembly line.
04 - Individually roll each potato ball in flour, dip into the beaten egg, and cover thoroughly with breadcrumbs.
05 - Heat olive oil in a large skillet over medium heat. Fry the coated bites in batches for 2 to 3 minutes per side, turning gently, until uniformly golden brown and crisp.
06 - Transfer crispy bites onto a paper towel-lined plate to absorb excess oil. Immediately garnish with chopped parsley before serving warm.
