Classic Chicken Parmesan over Spaghetti (Print version)

Crispy breaded chicken cutlets baked with marinara and mozzarella, served over saucy spaghetti for a cozy family dinner.

# Ingredients:

For the chicken

01 - 2 large boneless skinless chicken breasts, about 1 1/2 lb (680 g), sliced into 4 cutlets
02 - 1 teaspoon kosher salt
03 - 1/2 teaspoon black pepper
04 - 1/2 cup (65 g) all-purpose flour
05 - 2 large eggs, beaten
06 - 1 cup (60 g) panko breadcrumbs
07 - 1/2 cup (55 g) Italian seasoned breadcrumbs
08 - 1/2 cup (45 g) finely grated Parmesan cheese, divided
09 - 1 teaspoon garlic powder
10 - 1/2 cup (120 ml) olive oil or neutral oil, for shallow frying

For the sauce, cheese, and pasta

11 - 12 oz (340 g) spaghetti
12 - 3 cups (720 ml) marinara sauce, warmed
13 - 1 1/2 cups (170 g) shredded low-moisture mozzarella
14 - 2 tablespoons chopped fresh basil or parsley
15 - Extra Parmesan cheese, for serving

# Instructions:

01 - Heat the oven to 425°F. Slice the chicken breasts horizontally into 4 cutlets, pound to about 1/2 inch thick, and season both sides with salt and pepper.
02 - Place flour in a shallow dish. Place beaten eggs in a second dish. In a third dish, mix panko, Italian breadcrumbs, 1/3 cup Parmesan, and garlic powder.
03 - Coat each cutlet in flour and shake off the excess. Dip in egg, then press into the breadcrumb mixture until well coated on both sides.
04 - Heat the oil in a large skillet over medium-high heat. Fry the cutlets for 3-4 minutes per side until deeply golden, then transfer to a wire rack set over a baking sheet.
05 - Spoon about 2 tablespoons marinara over the center of each cutlet. Top with mozzarella and the remaining Parmesan.
06 - Bake for 8-10 minutes, until the cheese is melted and the chicken reaches 165°F in the thickest part.
07 - While the chicken bakes, boil the spaghetti in salted water until al dente. Drain, then toss with about 2 cups warm marinara.
08 - Divide the spaghetti among plates and set a cheesy chicken cutlet on top. Spoon extra marinara around the pasta and finish with basil or parsley and more Parmesan.
