Cinnamon Glazed Apple Fritter Bites (Print version)

Crispy bite-sized fritters loaded with tender apple chunks, fried golden, and dipped in a sweet cinnamon glaze. Ready in 30 minutes.

# Ingredients:

For the batter

01 - 1 cup (125 g) all-purpose flour
02 - 2 teaspoons baking powder
03 - 1 teaspoon ground cinnamon
04 - 1/4 teaspoon ground nutmeg
05 - 1/4 teaspoon fine salt
06 - 2 tablespoons granulated sugar
07 - 2/3 cup (160 ml) whole milk
08 - 1 large egg
09 - 1 teaspoon pure vanilla extract
10 - 2 medium Honeycrisp or Fuji apples, peeled and finely diced (about 1 1/2 cups / 200 g)
11 - Vegetable oil for frying (about 2 inches deep)

For the cinnamon glaze

12 - 1 cup (120 g) powdered sugar
13 - 1 teaspoon ground cinnamon
14 - 3 to 4 tablespoons whole milk
15 - 1/2 teaspoon pure vanilla extract

# Instructions:

01 - Pour 2 inches of vegetable oil into a heavy-bottomed pot or Dutch oven. Heat over medium heat to 350°F (175°C), using a clip-on thermometer to monitor. Wait until the temperature holds steady before adding batter.
02 - Whisk the flour, baking powder, cinnamon, nutmeg, salt, and sugar together in a large bowl until evenly blended with no clumps.
03 - In a separate bowl, whisk the milk, egg, and vanilla until smooth. Pour into the dry ingredients and stir just until a thick batter forms. A few small lumps are fine. Do not overmix.
04 - Add the finely diced apple to the batter and fold with a spatula until the pieces are evenly distributed throughout.
05 - Drop rounded tablespoons of batter into the hot oil, 5 or 6 at a time. Fry for 2 to 3 minutes per side until deep golden brown, turning with a slotted spoon. Drain on a wire rack or paper towels. Return the oil to 350°F between each batch.
06 - Whisk the powdered sugar, cinnamon, milk, and vanilla in a shallow bowl until smooth. Start with 3 tablespoons of milk and add more by the teaspoon until the glaze drips slowly from a spoon.
07 - While fritters are still warm, dip each one in the glaze or drizzle generously over the top. Set on a wire rack for 3 to 4 minutes for the glaze to set, then serve immediately.
