In a medium bowl, combine cottage cheese, eggs, honey or maple syrup, and vanilla extract. Whisk until smooth and creamy.

Fold in almond flour, ground cinnamon, a pinch of salt, and finely chopped apple until the batter is evenly mixed.

Using a spoon, portion the mixture onto the lined baking tray, forming small roll or log shapes spaced apart.

Bake for 20 to 25 minutes until the rollups turn lightly golden on top.
