Cilantro Lime Avocado Salsa (Print version)

Chunky, bright, and full of flavor. This cilantro lime avocado salsa comes together in 10 minutes with ripe avocados, fresh lime, jalapeño, and plenty of cilantro. No cooking required.

# Ingredients:

For the salsa

01 - 2 large ripe avocados, pitted and diced into 1/2-inch cubes
02 - 2 Roma tomatoes, seeded and finely diced
03 - 1/4 small red onion, finely diced (about 3 tablespoons)
04 - 1 jalapeño, seeded and minced
05 - 1/2 cup fresh cilantro leaves, roughly chopped
06 - Juice of 2 limes (about 3 tablespoons)
07 - 1 clove garlic, minced
08 - 1/2 teaspoon kosher salt, plus more to taste
09 - 1/4 teaspoon ground cumin (optional)

# Instructions:

01 - Place the diced red onion in a small bowl of cold water for 2 minutes, then drain and pat dry. This step removes the harsh raw bite without sacrificing the crunch.
02 - Halve each avocado, remove the pit, score the flesh into a 1/2-inch grid with a knife, and scoop the cubes into a large bowl. Add the lime juice immediately and toss gently to coat each piece.
03 - Add the tomato, drained onion, jalapeño, cilantro, garlic, salt, and cumin to the bowl. Fold everything together gently with a large spoon to keep the avocado pieces intact.
04 - Taste the salsa and add more lime juice for brightness or more salt if it tastes flat. Adjust before serving.
05 - Let the salsa sit for 5 minutes before serving so the flavors settle. Serve with tortilla chips or spoon over tacos, grilled chicken, or grain bowls.
