# Ingredients:

For the donut dough

01 - 3/4 cup (180 ml) whole milk, warmed to 105-110 F
02 - 2 1/4 teaspoons active dry yeast
03 - 1/4 cup (50 g) granulated sugar, divided
04 - 2 large eggs, room temperature
05 - 4 tablespoons (56 g) unsalted butter, melted and cooled
06 - 3 1/2 cups (420 g) all-purpose flour, plus more for dusting
07 - 1 teaspoon fine salt
08 - 6 cups neutral oil, for frying

For the chocolate glaze

09 - 6 oz (170 g) semisweet chocolate, finely chopped
10 - 3 tablespoons (42 g) unsalted butter
11 - 1 tablespoon light corn syrup
12 - 1 cup (120 g) powdered sugar, sifted
13 - 3-4 tablespoons whole milk or heavy cream
14 - 1 teaspoon vanilla extract
15 - 1/3 cup rainbow sprinkles, optional

# Instructions:

01 - Stir warm milk, yeast, and 1 tablespoon of the sugar in the bowl of a stand mixer. Let stand until foamy, 5-10 minutes.
02 - Add the remaining sugar, eggs, melted butter, flour, and salt. Mix with a dough hook on medium-low speed for 6-8 minutes, until smooth and elastic but still slightly tacky.
03 - Transfer the dough to a lightly oiled bowl, cover, and let rise in a warm spot until doubled, about 1-1 1/2 hours.
04 - Roll the dough on a lightly floured surface to 1/2 inch thick. Cut with a 3-inch donut cutter and place each donut on a parchment square.
05 - Cover loosely and let the cut donuts rise until puffy and light, 30-40 minutes. They should look soft around the edges.
06 - Heat oil in a heavy pot to 350 F. Fry 2-3 donuts at a time for 60-75 seconds per side, then transfer to a rack to drain and cool slightly.
07 - Melt chocolate, butter, and corn syrup gently. Whisk in powdered sugar, milk, and vanilla until smooth. Dip the donut tops, add sprinkles if using, and let set for 10-15 minutes.
