Tender beef stir-fried with peppers, onions, and tomatoes for a savory, vibrant meal.

# Ingredients:

01 - 1 pound beef top sirloin steak
02 - 1/4 cup soy sauce
03 - 2 tablespoons white sugar
04 - 2 tablespoons cornstarch
05 - 1/2 teaspoon ground ginger
06 - 3 tablespoons vegetable oil, divided
07 - 1 red onion, cut into 1-inch squares
08 - 1 green bell pepper, cut into 1-inch squares
09 - 2 tomatoes, cut into wedges

# Instructions:

01 - Slice the beef into 1/2-inch thick strips across the grain for tenderness.
02 - In a bowl, whisk together the soy sauce, white sugar, cornstarch, and ground ginger until the mixture is smooth and the sugar is dissolved.
03 - Coat the beef slices thoroughly in the marinade, ensuring even coverage.
04 - Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Cook the beef strips in batches, stirring frequently until browned, about 3 minutes. Transfer to a bowl and set aside.
05 - In the same wok, return the seared beef and add the red onion. Toss and cook for about 2 minutes until the onion begins to soften.
06 - Stir in the green bell pepper and continue cooking for 2 minutes until it becomes vibrant and tender.
07 - Add the tomato wedges to the wok and stir everything together to combine the flavors.
08 - Serve the dish immediately. Pair with steamed rice for a complete meal.
