Cherry Goat Cheese crostini (Print Version)

# Ingredients:

→ Base

01 - 12 slices baguette, cut 1/2 inch thick
02 - 2 teaspoons extra virgin olive oil

→ Toppings

03 - 24 fresh or frozen cherries, pitted and halved
04 - 1 sprig fresh rosemary
05 - 1/4 cup soft goat cheese
06 - 1/4 cup cream cheese
07 - 1/2 teaspoon coarse sea salt
08 - 1 tablespoon plus 1 teaspoon honey
09 - 1 tablespoon balsamic glaze (homemade or store-bought)

# Instructions:

01 - Brush baguette slices with olive oil and bake at 375°F for 7-8 minutes, flipping halfway, until golden brown. Crostini should be crispy outside but tender inside.
02 - Spread halved cherries on parchment-lined baking sheet, drizzle with olive oil and sprinkle with chopped rosemary. Roast 5-7 minutes alongside bread. Remove and discard rosemary sprigs.
03 - In a food processor, blend goat cheese, cream cheese, 1 teaspoon honey, 1/2 teaspoon lemon juice and 1/2 teaspoon lemon zest until smooth.
04 - Spread each crostini with whipped goat cheese mixture, top with 2-3 roasted cherry halves. Drizzle with remaining honey and balsamic glaze, then sprinkle with sea salt and fresh rosemary.

01 - Roasted cherries can be stored in the refrigerator for up to 3 days
02 - Goat cheese mixture can be made up to 5 days ahead and stored in an airtight container
