Cheesy Garlic Zucchini Bites (Print Version)

# Ingredients:

→ For the Bites

01 - 2 large zucchini, shredded and squeezed dry (about 2 cups)
02 - 2 cloves garlic, finely minced
03 - 1/2 cup breadcrumbs
04 - 3/4 cup grated parmesan cheese
05 - 1/2 cup shredded cheddar cheese
06 - 2 tablespoons fresh parsley, minced
07 - 2 tablespoons fresh chives, minced
08 - 2 large eggs
09 - 1/4 teaspoon salt
10 - 1/4 teaspoon black pepper

→ For Serving

11 - Marinara sauce or ranch dressing for dipping

# Instructions:

01 - Preheat your oven to 400°F (200°C)
02 - Grate the zucchini using a box grater, then squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth
03 - In a large bowl, combine the squeezed zucchini, minced garlic, breadcrumbs, both cheeses, herbs, eggs, salt, and pepper. Mix everything really well
04 - Line a baking sheet with parchment paper. Using a 2-tablespoon scoop, form small nugget-sized bites and arrange them on the sheet
05 - Bake for 20-22 minutes until golden brown and crispy around the edges. Serve warm with marinara sauce or ranch for dipping

02 - Can be made ahead and reheated
03 - Squeeze zucchini very well for best results
