01 -
Beat the cream cheese, powdered sugar, sour cream, vanilla, and salt until smooth. Chill for at least 30 minutes, or scoop small 1/2-teaspoon portions onto parchment and freeze for 15-20 minutes.
02 -
Prepare and bake the cake mix according to the package directions. Let the cake cool completely before crumbling, about 1 hour at room temperature.
03 -
Crumble the cooled cake finely into a large bowl. Mix in 3/4 cup frosting first, then add more only if needed, until the crumbs press together like soft dough.
04 -
Flatten about 1 tablespoon of cake mixture in your palm. Add a small chilled dollop of cheesecake filling, wrap the cake mixture around it, and roll gently into a ball.
05 -
Melt a small amount of coating. Dip the tip of each lollipop stick into the coating, insert it halfway into a cake ball, and chill the pops for 30 minutes until firm.
06 -
Melt the remaining coating until smooth, thinning with coconut oil if needed. Dip each chilled pop, tap off excess coating, add sprinkles right away, and stand upright until set.
07 -
Refrigerate the finished cake pops for at least 20 minutes before serving so the cheesecake center is cold and the coating is firm.
