Crispy cheeseburger eggrolls packed with seasoned beef, pickles, melted cheese, and a tangy burger sauce for dipping.

# Ingredients:

For the cheeseburger filling

01 - 1 tablespoon olive oil
02 - 1 lb (450 g) 85 percent lean ground beef
03 - 1/2 medium yellow onion, finely diced
04 - 1 teaspoon garlic powder
05 - 3/4 teaspoon kosher salt
06 - 1/2 teaspoon black pepper
07 - 1 tablespoon Worcestershire sauce
08 - 2 tablespoons ketchup
09 - 1 tablespoon yellow mustard
10 - 1/2 cup finely diced dill pickles
11 - 1 cup (115 g) shredded sharp cheddar cheese
12 - 4 slices American cheese, torn into small pieces

For rolling and frying

13 - 12 egg roll wrappers
14 - Small bowl of water, for sealing
15 - 3 cups vegetable oil, or enough for 1 inch in the pan

For the burger sauce

16 - 1/2 cup mayonnaise
17 - 2 tablespoons ketchup
18 - 1 tablespoon dill pickle relish
19 - 1 teaspoon yellow mustard
20 - 1 teaspoon pickle juice or white vinegar
21 - Pinch of black pepper

# Instructions:

01 - Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion, then cook for 7-9 minutes, breaking up the beef, until browned and the beef reaches 160 F. Drain excess grease.
02 - Stir in garlic powder, salt, pepper, Worcestershire sauce, ketchup, mustard, and diced pickles. Cook for 1 minute, then remove from the heat.
03 - Fold in the cheddar and American cheese until evenly mixed. Let the filling cool for about 10 minutes so it is warm but no longer steaming.
04 - Place one wrapper on the counter like a diamond. Spoon about 3 tablespoons filling near the lower corner. Fold the bottom over the filling, tuck in the sides, roll tightly, and seal the top corner with water.
05 - Heat 1 inch of oil in a heavy skillet or Dutch oven to 350 F. Fry 3-4 eggrolls at a time for 2-3 minutes per side until crisp and deep golden. Drain on a wire rack.
06 - Stir together mayonnaise, ketchup, relish, mustard, pickle juice, and pepper. Serve the eggrolls hot with the sauce for dipping.

# Good to know:

01 - Makes 12 eggrolls, about 2 per serving.
02 - Best served hot while the wrappers are crisp and the cheese is melted.
03 - Air fryer option: spray rolled eggrolls with oil and cook at 375 F for 10-12 minutes, turning halfway.
