Drain the pineapple rings and reserve 1 1/2 cups of the juice. Pat the rings lightly with paper towels so they are not dripping wet.

Add the reserved pineapple juice, 2 cups of the sugar, and the corn syrup to a wide saucepan. Warm over medium heat, stirring until the sugar dissolves, then simmer gently for 4 minutes.

Reduce the heat to low. Add the pineapple rings in a loose layer and simmer for 45-50 minutes, turning every 10-15 minutes, until glossy and translucent.

Transfer the rings to a cooling rack set over parchment paper. Let them dry at room temperature overnight, or dry in a 200°F oven for 25-30 minutes until tacky but not wet.

Place the remaining 1 cup sugar in a shallow bowl. Roll each dried pineapple ring in sugar, then let the rings rest for 10 minutes before storing in an airtight container.
