Simple 3-Ingredient Candied Pineapple (Print version)

Sweet, chewy candied pineapple rings made with just canned pineapple, sugar, and corn syrup.

# Ingredients:

For the candied pineapple

01 - 2 cans (20 oz each) pineapple rings in juice, drained with 1 1/2 cups juice reserved
02 - 3 cups (600 g) granulated sugar, divided
03 - 1/4 cup (80 g) light corn syrup

# Instructions:

01 - Drain the pineapple rings and reserve 1 1/2 cups of the juice. Pat the rings lightly with paper towels so they are not dripping wet.
02 - Add the reserved pineapple juice, 2 cups of the sugar, and the corn syrup to a wide saucepan. Warm over medium heat, stirring until the sugar dissolves, then simmer gently for 4 minutes.
03 - Reduce the heat to low. Add the pineapple rings in a loose layer and simmer for 45-50 minutes, turning every 10-15 minutes, until glossy and translucent.
04 - Transfer the rings to a cooling rack set over parchment paper. Let them dry at room temperature overnight, or dry in a 200°F oven for 25-30 minutes until tacky but not wet.
05 - Place the remaining 1 cup sugar in a shallow bowl. Roll each dried pineapple ring in sugar, then let the rings rest for 10 minutes before storing in an airtight container.

02 - The leftover syrup can be used in drinks, glazes, or brushed over cakes.
