Juicy Cajun steak bites and browned mushrooms tossed in garlic butter for a fast skillet dinner with bold flavor.

# Ingredients:

For the steak and mushrooms

01 - 1 1/2 lb (680 g) sirloin steak, cut into 1-inch bites
02 - 12 oz (340 g) cremini mushrooms, halved or thickly sliced
03 - 2 tablespoons olive oil, divided
04 - 2 teaspoons Cajun seasoning
05 - 1 teaspoon smoked paprika
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon onion powder
08 - 1/4 teaspoon black pepper
09 - 1/4 teaspoon cayenne pepper, optional
10 - 1/2 teaspoon kosher salt, only if using low-salt Cajun seasoning

For the Cajun butter

11 - 4 tablespoons (56 g) unsalted butter
12 - 4 cloves garlic, minced
13 - 1 tablespoon fresh lemon juice
14 - 2 tablespoons chopped fresh parsley
15 - Thinly sliced green onions, optional for serving

# Instructions:

01 - Pat the steak bites very dry. Toss with 1 tablespoon olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, black pepper, cayenne, and salt if needed.
02 - Heat a large cast-iron or stainless skillet over medium-high heat. Add 1 tablespoon olive oil and the mushrooms. Cook for 5-7 minutes, stirring only now and then, until browned and most moisture has cooked off. Transfer to a plate.
03 - Return the skillet to medium-high heat. Add steak bites in a single layer, working in two batches if needed. Sear for 2-3 minutes per side until browned and cooked to your liking. Transfer to the plate with the mushrooms.
04 - Reduce heat to medium-low. Add butter and garlic to the skillet. Stir for 30-45 seconds until the garlic smells fragrant but has not browned.
05 - Return steak and mushrooms to the skillet. Add lemon juice and parsley, then toss for 1 minute until glossy and coated in Cajun butter. Serve hot with green onions if using.

# Good to know:

01 - Cook steak in batches so it sears instead of steaming.
02 - Use less salt if your Cajun seasoning already tastes salty.
03 - Best served right away while the butter sauce is glossy.
