Blue Cheese Burgers (Print Version)

# Ingredients:

01 - 500g beef mince.
02 - 1 red onion.
03 - 55g blue cheese, crumbled.
04 - 55g fresh breadcrumbs.
05 - 1 large egg.
06 - 1 tablespoon parsley, chopped.
07 - 2 teaspoons Worcestershire sauce.
08 - 1 teaspoon Dijon mustard.
09 - 1 teaspoon salt.
10 - 1/2 teaspoon black pepper.
11 - Tabasco sauce.
12 - 6 slices pancetta.
13 - Onion chutney.
14 - Blue Cheese Sauce:.
15 - 150g blue cheese.
16 - 4-5 tablespoons sour cream.
17 - 1 tablespoon chives.
18 - 1-2 tablespoons olive oil.
19 - 1 teaspoon Worcestershire sauce.

# Instructions:

01 - Mix burger ingredients, form 6 patties.
02 - Chill 30 minutes.
03 - Cook pancetta until crisp.
04 - Cook burgers 3-4 minutes per side.
05 - Mix sauce ingredients.
06 - Toast buns, spread with chutney.
07 - Layer burger, pancetta, sauce.
