Pastry Twists (Print Version)

# Ingredients:

01 - 2 sheets puff pastry.
02 - 2 cups blackberries.
03 - ½ cup water.
04 - 1 tablespoon lemon juice.
05 - ¾ cup sugar.
06 - 8 ounces goat cheese.
07 - 2 lemons, zested.
08 - 4 teaspoons raw sugar.
09 - 2 teaspoons fresh thyme, minced.
10 - 1 egg.

# Instructions:

01 - Cook blackberries, water, lemon juice and sugar in saucepan 20-30 minutes until thickened. Smash berries and cool to room temperature.
02 - Thaw puff pastry 20-25 minutes. Roll out on floured surface into rectangle. Top with half the goat cheese and jam.
03 - Cut dough into 12 strips. Fold each in half, then twist while gently stretching. Repeat with second sheet.
04 - Brush with egg wash, sprinkle with lemon-thyme sugar. Bake at 400°F for 16-18 minutes until golden. Cool before serving.

# Notes:

01 - Jam can be made ahead and refrigerated.
02 - Best served at room temperature.
