In a large mixing bowl, add the cubed sweet potatoes. Drizzle the olive oil and maple syrup over the sweet potatoes.

Sprinkle the cinnamon, smoked paprika, sea salt, black pepper, and rosemary on top. Toss everything together until the sweet potatoes are well-coated in the oil and spices.

Transfer the seasoned sweet potatoes onto the prepared baking sheet, spreading them into a single layer, leaving some space between the cubes for even roasting.

Place the baking sheet in the preheated oven and roast for about 25-30 minutes, turning the sweet potatoes halfway through to ensure they brown evenly. They should be tender on the inside and slightly crispy on the outside.

If using balsamic vinegar, drizzle it over the roasted sweet potatoes during the last 5 minutes of roasting for an extra layer of flavor.

Once done, remove the sweet potatoes from the oven and let them cool for a couple of minutes. Transfer to a serving bowl and sprinkle with fresh parsley for a pop of color.
