BBQ Chicken and Potato Skillet (Print version)

A cheesy BBQ chicken and potato skillet with crisp-edged potatoes, saucy chicken, and a fast broiled finish.

# Ingredients:

For the potatoes

01 - 1 1/2 lb (680 g) Yukon gold potatoes, cut into 1/2-inch cubes
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon kosher salt
04 - 1/4 teaspoon black pepper
05 - 1/2 teaspoon smoked paprika

For the chicken and sauce

06 - 1 1/2 lb (680 g) boneless skinless chicken breasts or thighs, cut into 1-inch pieces
07 - 1 tablespoon olive oil
08 - 1 teaspoon garlic powder
09 - 1/2 teaspoon onion powder
10 - 1/2 teaspoon kosher salt
11 - 1/4 teaspoon black pepper
12 - 3/4 cup (180 ml) gluten-free BBQ sauce, plus more for serving
13 - 1 teaspoon apple cider vinegar
14 - 1 1/2 cups (170 g) shredded Monterey Jack or cheddar cheese
15 - 2 scallions, thinly sliced, or 2 tablespoons chopped parsley

# Instructions:

01 - Place the diced potatoes in a microwave-safe bowl with 2 tablespoons water. Cover loosely and microwave for 4-5 minutes, until barely tender. Drain and pat very dry.
02 - Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add the potatoes, salt, pepper, and smoked paprika. Cook for 8-10 minutes, turning occasionally, until golden at the edges. Transfer to a plate.
03 - Toss the chicken with garlic powder, onion powder, salt, and pepper while the skillet stays hot.
04 - Add the remaining 1 tablespoon olive oil to the skillet. Cook the chicken for 6-8 minutes, stirring occasionally, until browned and cooked through to 165°F.
05 - Reduce the heat to medium-low. Stir in the BBQ sauce and apple cider vinegar. Simmer for 2-3 minutes, until the chicken is glossy and coated.
06 - Return the potatoes to the skillet and fold gently to coat. Sprinkle the cheese over the top and broil for 2-3 minutes, until melted and lightly browned. Finish with scallions or parsley and serve hot.
