Maple Bacon Breakfast Potatoes (Print Version)

# Ingredients:

→ Base

01 - 3 medium golden potatoes, skin on
02 - 2 pieces bacon
03 - 1 tablespoon olive oil, plus more if needed

→ Seasonings

04 - 1-2 garlic cloves, minced
05 - 1 tablespoon pure maple syrup
06 - Salt to taste
07 - Black pepper to taste
08 - Old Bay seasoning to taste
09 - Parsley for garnish

# Instructions:

01 - Freeze bacon for easier chopping. Dice potatoes into squares and keep in water to prevent browning.
02 - Heat oil in large skillet over medium-high heat. Drain potatoes, add to pan, season with salt, pepper, and Old Bay. Cook 10 minutes, stirring often.
03 - Add chopped bacon to potatoes. Cook 5-6 minutes until bacon crisps, letting fat cook potatoes further.
04 - Reduce heat to medium-low, add garlic and parsley. Cook until fragrant, about one minute.
05 - Drizzle with maple syrup, cook another minute to caramelize. Serve hot with sunny side up egg.

01 - Can use red potatoes instead
02 - Recipe easily scales up
03 - If using turkey bacon, add more oil during cooking
