Freeze bacon for easier chopping. Dice potatoes into squares and keep in water to prevent browning.

Heat oil in large skillet over medium-high heat. Drain potatoes, add to pan, season with salt, pepper, and Old Bay. Cook 10 minutes, stirring often.

Add chopped bacon to potatoes. Cook 5-6 minutes until bacon crisps, letting fat cook potatoes further.

Reduce heat to medium-low, add garlic and parsley. Cook until fragrant, about one minute.
