Banana Pudding Rice Krispie Treats (Print version)

Chewy Banana Pudding Rice Krispie Treats made with marshmallows, vanilla wafers, pudding mix, and a white chocolate drizzle.

# Ingredients:

For the bars

01 - 6 cups (160 g) crisp rice cereal
02 - 1 1/2 cups (75 g) vanilla wafers, crushed, plus more for topping
03 - 6 tablespoons (85 g) unsalted butter
04 - 1 (10 oz or 283 g) bag mini marshmallows
05 - 1/3 cup (32 g) instant vanilla pudding mix
06 - 1/3 cup (18 g) crushed freeze-dried banana powder
07 - 1 teaspoon vanilla extract
08 - 1/4 teaspoon fine salt

For the topping

09 - 3 oz (85 g) white chocolate or white candy melts
10 - 8-12 mini vanilla wafers or extra wafer crumbs

# Instructions:

01 - Grease a 9x13-inch pan and line it with parchment, leaving a little overhang for lifting. Lightly grease a spatula or your hands.
02 - Crush the vanilla wafers into small pieces. Pulse or crush freeze-dried banana until it becomes a fine powder, then measure 1/3 cup.
03 - Melt the butter in a large pot over low heat. Add the mini marshmallows and stir until just melted and smooth, about 3-4 minutes.
04 - Remove the pot from the heat. Stir in the pudding mix, banana powder, vanilla extract, and salt until evenly combined.
05 - Add the crisp rice cereal and crushed wafers. Fold gently until the cereal is evenly coated and the wafer pieces are spread through the mixture.
06 - Transfer the mixture to the prepared pan and press it into an even layer without packing it down hard. Melt the white chocolate, drizzle it over the top, and sprinkle with extra wafers.
07 - Let the bars set for at least 30 minutes at room temperature. Lift from the pan and cut into 16 squares with a sharp knife.

01 - Best eaten within 24 hours for the crispiest texture.
02 - Cooling time is about 30 minutes and is not included in cook time.
03 - Fresh banana slices are best added only right before serving.
