Baked Apple Fritters Glaze (Print Version)

Crispy baked fritters packed with spiced apple and covered in a sweet vanilla glaze, perfect for autumn snacking.

# Ingredients:

→ Dough

01 - 95 grams all-purpose flour
02 - 90 grams white whole wheat flour
03 - 110 grams brown sugar
04 - 2 teaspoons baking powder
05 - 1 teaspoon ground cinnamon
06 - 1/2 teaspoon ground nutmeg
07 - 1/4 teaspoon ground allspice
08 - 1/4 teaspoon fine salt
09 - 85 grams unsalted butter, cold and cut into pieces
10 - 120 millilitres milk
11 - 1 large egg
12 - 1 teaspoon vanilla extract
13 - 1 cup (approx. 130 grams) peeled and finely chopped apple

→ Glaze

14 - 120 grams confectioner’s sugar
15 - 30 millilitres milk
16 - 1 teaspoon vanilla extract

# Instructions:

01 - Preheat oven to 200°C. Line a baking sheet with a silicone baking mat.
02 - In a large bowl, whisk together all-purpose flour, white whole wheat flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt until well blended.
03 - Add the cold butter pieces and blend into the dry mixture using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
04 - In a separate bowl, whisk together milk, egg, and vanilla extract. Pour the mixture over the dry ingredients and stir until just combined; do not overmix.
05 - Fold in the chopped apples gently, ensuring even distribution.
06 - Scoop 60 millilitre portions of dough and drop onto the prepared baking sheet, spacing evenly.
07 - Bake for 11 to 13 minutes, or until the bottoms are golden and the centers are set.
08 - Transfer fritters to a wire rack. Increase oven heat to the broil setting.
09 - Whisk together confectioner’s sugar, milk, and vanilla extract in a small bowl until smooth.
10 - Brush a thin layer of glaze over each fritter. Place under the broiler for 2 to 4 minutes, or until the tops are golden brown.
11 - Brush the remaining glaze over the warm fritters and allow the glaze to set fully before serving.
