Healing Chicken Soup (Print Version)

# Ingredients:

01 - 1 pound chicken thighs, bone in.
02 - 1 potato, peeled and chopped.
03 - 1 carrot, chopped.
04 - 1 onion, chopped.
05 - 2 tablespoons dried mint.
06 - 1 tablespoon ginger, grated.
07 - 1 teaspoon turmeric.
08 - ½ cup cauliflower, chopped.
09 - 4-5 cups filtered water.
10 - Salt and pepper to taste.

# Instructions:

01 - Add chicken thighs to pot with 4-5 cups salted water. Bring to boil.
02 - Add onion, potato, turmeric and mint. Cook covered on medium-high heat.
03 - After 20-30 minutes, remove chicken. Cool slightly in bowl of water, then shred meat from bones.
04 - Return shredded chicken and broth to pot. Add carrot, ginger and cauliflower. Season with salt and pepper.
05 - Cook 5-10 minutes more until vegetables are tender. Serve hot.

01 - Contains anti-inflammatory ingredients like turmeric and ginger.
02 - Store leftovers in airtight container in fridge.
