5-Minute Cottage Cheese Biscuit (Print version)

A warm, tender cottage cheese mug biscuit made with almond flour, egg, and baking powder in about 5 minutes.

# Ingredients:

For one biscuit

01 - 1/4 cup (60 g) small-curd cottage cheese
02 - 1 large egg
03 - 3 tablespoons (21 g) almond flour
04 - 1/2 teaspoon baking powder
05 - 1 teaspoon melted butter, plus more for greasing
06 - 1/8 teaspoon fine salt
07 - 1/8 teaspoon garlic powder, optional
08 - 1 tablespoon chopped fresh chives, optional

For serving

09 - Butter, honey, jam, or extra chives, as desired

# Instructions:

01 - Lightly grease a 6-ounce ramekin or wide microwave-safe mug with butter or cooking spray.
02 - Add cottage cheese and egg to a small bowl. Mash very well with a fork, or blend briefly for a smoother biscuit.
03 - Stir in almond flour, baking powder, melted butter, salt, garlic powder, and chives until just combined. The batter should be thick and spoonable.
04 - Scrape the batter into the prepared ramekin. Microwave on high for 75-95 seconds, until the top looks set and springs back lightly.
05 - Let the biscuit stand for 1 minute. Turn it out, split it, and serve warm. For crisp edges, toast the cut sides in a buttered skillet for 1-2 minutes.

# Good to know:

01 - Best served warm right after cooking.
02 - Microwave strength varies, so begin checking at 75 seconds.
03 - For a sweeter biscuit, omit garlic powder and chives and add cinnamon.
