Squash Au Gratin (Print Version)

Ingredients:

01 - 2 medium zucchinis, sliced into rounds.
02 - 2 medium yellow squash, sliced into rounds.
03 - 2 tablespoons butter.
04 - 2 tablespoons all-purpose flour.
05 - 1 cup milk.
06 - 1 cup shredded cheddar cheese.
07 - 1/4 cup grated Parmesan cheese.
08 - Salt and pepper to taste.
09 - 1/4 cup breadcrumbs (optional).
10 - Fresh parsley, chopped, for garnish.

Instructions:

01 - Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
02 - In a big skillet, melt the butter over medium heat. Add the flour and stir it up for 1-2 minutes to make it into a roux.
03 - Slowly pour in the milk while whisking until it's smooth and thickened. Stir in the cheddar cheese and Parmesan cheese until they're all melted and smooth. Season it up with salt and pepper to your liking.
04 - Toss in the sliced zucchini and yellow squash into the cheesy sauce, making sure they're all coated nicely.
05 - Dump the zucchini and squash mix into the greased baking dish, spreading it out evenly.
06 - If you're feeling fancy, sprinkle breadcrumbs on top for a little extra crunch.
07 - Pop it in the oven you preheated and let it bake for 25-30 minutes, or until the veggies are soft and the top is golden brown and bubbling.
08 - Before serving, sprinkle some chopped parsley on top for a fresh finish.
