Tomatillo Avocado Salsa (Print Version)

Ingredients:

01 - 8 fresh tomatillos, husked and rinsed.
02 - 1 serrano pepper.
03 - 1 jalapeƱo pepper.
04 - 1 garlic clove.
05 - 2 tablespoons olive oil.
06 - 1/4 cup cilantro leaves.
07 - 1 small lime, juiced.
08 - 1/8 teaspoon cumin.
09 - 2 medium ripe avocados.
10 - 1 medium white onion, chopped.
11 - Sea salt to taste.
12 - Black pepper to taste.

Instructions:

01 - Position rack 5-7 inches from broiler, preheat on high.
02 - Halve tomatillos, arrange with peppers and garlic on foiled sheet.
03 - Drizzle with oil and salt, broil 5 minutes per side until charred.
04 - Steam peppers in plastic bag 10 minutes, then peel.
05 - Blend tomatillos, peppers, garlic, cilantro, lime, cumin.
06 - Add avocados and onion, blend until smooth.
07 - Season with salt and pepper to taste.

Notes:

01 - Keeps 3 days refrigerated.
02 - Remove pepper seeds for milder.
03 - Must peel peppers after roasting.
04 - Use firm fresh tomatillos.
