Taco Rice (Print Version)

Ingredients:

01 - 1 lb (450g) ground beef.
02 - 1 small onion, finely chopped.
03 - 1 bell pepper, diced.
04 - 2 cloves garlic, minced.
05 - 1 packet (1 oz) taco seasoning mix.
06 - 1 cup salsa.
07 - 1 cup corn kernels (fresh, frozen, or canned).
08 - 1 can (15 oz) black beans, drained and rinsed.
09 - 2 cups cooked white rice.
10 - Salt and pepper, to taste.
11 - Shredded cheese (optional topping).
12 - Diced tomatoes (optional topping).
13 - Sliced avocado (optional topping).
14 - Sour cream (optional topping).
15 - Chopped cilantro (optional topping).
16 - Lime wedges (optional topping).

Instructions:

01 - In a large skillet or frying pan, cook the ground beef over medium-high heat until browned and cooked through, breaking it up into crumbles as it cooks. Drain any excess fat from the skillet.
02 - Add the chopped onion, diced bell pepper, and minced garlic to the skillet with the cooked ground beef. Cook for 3-4 minutes until the vegetables start to soften.
03 - Sprinkle the taco seasoning mix over the beef and vegetables. Stir well to combine and cook for another 1-2 minutes.
04 - Stir in the salsa, corn kernels, and black beans. Bring the mixture to a simmer.
05 - Add the cooked white rice to the skillet with the beef and vegetable mixture. Stir everything together until well combined.
06 - Allow the mixture to simmer for 5-7 minutes, stirring occasionally, to let the flavors meld together. Season with salt and pepper to taste.
07 - Remove the skillet from heat. Serve the Taco Rice hot, garnished with your choice of toppings such as shredded cheese, diced tomatoes, sliced avocado, sour cream, chopped cilantro, and lime wedges.
