Savory Reuben Egg Rolls (Print Version)

Ingredients:

01 - 12 egg roll wrappers.
02 - 1 lb corned beef, thinly sliced.
03 - 1 cup sauerkraut, drained.
04 - 1 cup Swiss cheese, shredded.
05 - 1/4 cup Thousand Island dressing.
06 - 1 egg, beaten (for sealing).
07 - Vegetable oil (for frying).
08 - Extra Thousand Island dressing (for dipping).

Instructions:

01 - Lay an egg roll wrapper on a clean surface, with one corner pointing towards you.
02 - Place a slice of corned beef in the center of the wrapper.
03 - Add a spoonful of sauerkraut and a sprinkle of shredded Swiss cheese on top of the corned beef.
04 - Drizzle a small amount of Thousand Island dressing over the fillings.
05 - Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly.
06 - Brush the top corner with beaten egg to seal.
07 - Repeat with the remaining wrappers and fillings.
08 - Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
09 - Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per batch.
10 - Remove from oil and drain on paper towels.
11 - Serve hot with extra Thousand Island dressing for dipping.
