Pumpkin S’mores Cookies (Print Version)

1 large egg.

3/4 cup brown sugar, packed.

1/4 cup granulated sugar.

1/2 cup pumpkin puree.

1 teaspoon vanilla extract.

1 teaspoon pumpkin pie spice.

1 cup chocolate chips.

1 cup mini marshmallows.

8 graham crackers, broken into small pieces.

1 teaspoon food coloring, orange (optional).

1/2 cup extra chocolate chips (optional).

Crushed graham crackers for garnish.
Instructions:

Preheat the oven to 350°F and prepare a baking sheet with parchment paper.

In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.

Add the pumpkin puree, egg, and vanilla extract to the butter mixture, stirring until well blended. Add orange food coloring if desired.

In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.

Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.

Gently fold in the chocolate chips, mini marshmallows, and graham cracker pieces.

Scoop the cookie dough onto the prepared baking sheet, spacing the cookies about 2 inches apart. Add additional marshmallows and crushed graham crackers on top if desired.

Bake for 12-14 minutes, or until the edges are golden and the centers are slightly soft.

Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.
Notes:

You can use orange food coloring for a more festive look, but it's optional.

For an extra s'mores flavor, you can add extra chocolate chips or top the cookies with marshmallows before baking.
