Pumpkin S’mores Cookies (Print Version)

Ingredients:

01 - 1 large egg.
02 - 1 cup unsalted butter, softened.
03 - 3/4 cup brown sugar, packed.
04 - 1/4 cup granulated sugar.
05 - 1/2 cup pumpkin puree.
06 - 1 teaspoon vanilla extract.
07 - 2 1/4 cups all-purpose flour.
08 - 1 teaspoon baking soda.
09 - 1 teaspoon pumpkin pie spice.
10 - 1/2 teaspoon salt.
11 - 1 cup chocolate chips.
12 - 1 cup mini marshmallows.
13 - 8 graham crackers, broken into small pieces.
14 - 1 teaspoon food coloring, orange (optional).
15 - 1/2 cup extra chocolate chips (optional).
16 - Marshmallows for garnish.
17 - Crushed graham crackers for garnish.

Instructions:

01 - Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
02 - In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
03 - Add the pumpkin puree, egg, and vanilla extract to the butter mixture, stirring until well blended. Add orange food coloring if desired.
04 - In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
05 - Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
06 - Gently fold in the chocolate chips, mini marshmallows, and graham cracker pieces.
07 - Scoop the cookie dough onto the prepared baking sheet, spacing the cookies about 2 inches apart. Add additional marshmallows and crushed graham crackers on top if desired.
08 - Bake for 12-14 minutes, or until the edges are golden and the centers are slightly soft.
09 - Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.

Notes:

01 - You can use orange food coloring for a more festive look, but it's optional.
02 - For an extra s'mores flavor, you can add extra chocolate chips or top the cookies with marshmallows before baking.
