Dessert (Print Version)
Ingredients:
01 -
1 medium potato, peeled and sliced.
02 -
2 tablespoons real butter.
03 -
Pinch of salt.
04 -
1 teaspoon pure vanilla.
05 -
2 pounds powdered sugar, more for rolling out candy.
06 -
1 jar creamy peanut butter (16 ounces, may not use all).
Instructions:
01 -
Peel and slice the potato. Cook in a small pan of water until very tender. Drain off the water.
02 -
Mash the potato with butter, vanilla, and salt until free of lumps.
03 -
Add powdered sugar gradually, mixing on low speed until the mixture becomes thick and slightly sticky.
04 -
Roll out the candy mixture on a powdered sugar-coated surface to a 1/4 inch thickness.
05 -
Spread a thin layer of peanut butter over the candy, leaving a small border.
06 -
Roll the candy up, chill in the freezer, then slice into pieces.
Notes:
01 -
Make sure to keep the surface well-coated in powdered sugar to prevent sticking.
02 -
The candy will harden slightly as it cools but remains chewy inside.
03 -
Adjust the amount of peanut butter filling based on your preference.
