Stuffed Shells (Print Version)

Ingredients:

01 - 1 pound ground beef (or ground turkey).
02 - 1 package low-sodium taco seasoning.
03 - 4 ounces cream cheese.
04 - 20 jumbo pasta shells (about 6 ounces).
05 - 1 1/2 cups salsa.
06 - 1 cup taco sauce.
07 - 1 cup cheddar cheese.
08 - 1 cup Monterrey jack cheese.
09 - 3 green onions, chopped.
10 - Sour cream.

Instructions:

01 - Preheat your oven to 350°F (175°C).
02 - In a skillet, brown the ground beef over medium heat. Add the taco seasoning and prepare according to the package directions. Stir in the cream cheese, cover, and simmer until the cheese is melted. Mix well and set aside to cool completely.
03 - While the beef is cooking, cook the pasta shells according to the package directions. Drain and set the shells out individually on a cutting board or baking sheet to prevent them from sticking together.
04 - Pour the salsa into the bottom of a 9×13-inch baking dish. Stuff each shell with 1-2 tablespoons of the meat mixture and place them in the baking dish open side up.
05 - Evenly cover the stuffed shells with taco sauce. Cover the dish with foil and bake for 15-20 minutes.
06 - After 15-20 minutes, remove the foil and add the shredded cheddar and Monterrey jack cheese. Bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
07 - Top with chopped green onions. Serve with sour cream and additional salsa if desired.
