Lime Mousse Cheesecake (Print Version)

Ingredients:

01 - 1 1/2 cups graham cracker crumbs.
02 - 1/4 cup granulated sugar.
03 - 1/2 cup unsalted butter, melted.
04 - 24 oz cream cheese, softened.
05 - 1 cup granulated sugar.
06 - 3 large eggs.
07 - 1 tsp vanilla extract.
08 - 1/4 cup water.
09 - 1 tbsp unflavored gelatin.
10 - 1/2 cup lime juice.
11 - Zest of 2 limes.
12 - 1 cup heavy cream.
13 - 1/2 cup powdered sugar.
14 - 1 cup heavy cream (for topping).
15 - 2 tbsp powdered sugar (for topping).
16 - Lime slices and zest (for garnish).

Instructions:

01 - Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
02 - In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and chill while preparing the filling.
03 - In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla extract. Pour the mixture over the crust and smooth the top.
04 - Bake for 45-50 minutes or until the center is almost set. Remove and cool completely.
05 - To make the lime mousse, sprinkle gelatin over water and let it bloom. Heat over low heat until dissolved and let cool slightly.
06 - In a bowl, whisk lime juice, lime zest, and the gelatin mixture. In another bowl, whip heavy cream and powdered sugar until stiff peaks form. Fold the whipped cream into the lime mixture to create the mousse.
07 - Spread the lime mousse over the cooled cheesecake and refrigerate for at least 4 hours or overnight.
08 - For the whipped cream topping, whip heavy cream and powdered sugar until stiff peaks form. Spread over the mousse layer.
09 - Garnish with lime slices and zest before serving.
