Jalapeno Popper Onion Rings (Print Version)

Ingredients:

01 - 3 onions.
02 - 2 cups cream cheese.
03 - 2 cups cheddar cheese, grated.
04 - 3 jalapeno peppers, finely diced.
05 - 1/2 tsp garlic powder.
06 - 1 tsp salt.
07 - 1 T black pepper.
08 - 2 cups flour.
09 - 4 eggs.
10 - 2 cups Panko crumbs.

Instructions:

01 - Slice onions into 1" slices and lay them out on a wax paper-lined sheet tray.
02 - In a large bowl, mix together cream cheese, cheddar cheese, jalapeno peppers, garlic powder, salt, and pepper.
03 - Fill each onion ring with the cheese mixture until level with the top of the ring.
04 - Bread each onion ring by first coating with flour, then dipping in beaten eggs, and finally covering with Panko crumbs.
05 - Freeze the prepared onion rings for at least 3 hours.
06 - Fry the onion rings at 385°F until golden brown.

Notes:

01 - Tip: Freezing the onion rings helps them hold their shape while frying.
02 - Variation: Add crumbled bacon to the filling for an extra smoky flavor.
