Honey Mustard Potatoes (Print Version)
Ingredients:

1 lb potatoes.

1/4 cup Dijon mustard.

1 tablespoon honey.

1/4 cup chicken broth.

2 tablespoons olive oil (divided).

1/2 teaspoon dried oregano.

1/2 teaspoon paprika.

1 tablespoon fresh chopped chives (for garnish).

Onion powder (to taste).

Garlic powder (to taste).

Salt and pepper (to taste).
Instructions:

Boil 1 lb of potatoes in salted water until tender. Drain and set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the boiled potatoes and sauté them until their skins are crispy and golden.

In the same skillet, add the remaining 1 tablespoon of olive oil. Stir in 1/4 cup of Dijon mustard, 1 tablespoon of honey, 1/4 cup of chicken broth, a pinch of garlic powder, onion powder, 1/2 teaspoon of dried oregano, 1/2 teaspoon of paprika, salt, and pepper. Cook while stirring until the mixture thickens into a sticky glaze.

Return the sautéed potatoes to the skillet and toss them in the honey mustard glaze until they are thoroughly coated and heated through.

Transfer the glazed potatoes to a serving dish and garnish with 1 tablespoon of fresh chopped chives.
