French Butter Cookies (Print Version)

Ingredients:

01 - ½ cup powdered sugar, sifted.
02 - ½ cup butter, softened.
03 - ¼ cup granulated sugar.
04 - 1 ⅛ cups all-purpose flour.
05 - ½ teaspoon vanilla extract.
06 - 1 egg yolk, at room temperature.

Instructions:

01 - Begin by creaming the softened butter together with the sifted powdered sugar until the mixture is pale and fluffy.
02 - Incorporate the egg yolk and vanilla extract, stirring until everything is well blended.
03 - Gradually sift in the flour, mixing until you achieve a soft dough consistency.
04 - Wrap the dough in plastic wrap and refrigerate it for about 20 minutes.
05 - Once chilled, divide the dough into two pieces and roll each into logs approximately 4 inches long and 1 inch in diameter.
06 - Individually wrap the logs in plastic wrap and freeze them for 45 minutes.
07 - Preheat your oven to 356° F (180° C) and prepare a baking sheet with parchment paper or a silicone mat. Remove the logs from the freezer, unwrap them, and roll each in granulated sugar for an even coating. Slice each log into ⅜ inch thick pieces and place them on the baking sheet.
08 - Bake for 15 to 18 minutes until they are golden brown. Once baked, let the cookies sit on the sheet for 5 minutes before transferring them to a cooling rack. They will be soft initially but will crisp up as they cool. Store the cooled cookies in an airtight jar for up to 5 days.
