Buckeye Brownie Cookies (Print Version)
Ingredients:

1 box fudge brownie mix (19.5 ounce or family size).

1/4 cup butter, melted.

4 ounces cream cheese, softened.

1 large egg.

1 cup powdered sugar.

1 cup creamy peanut butter.

4 ounces semi-sweet chocolate chips.
Instructions:

Combine the brownie mix, melted butter, softened cream cheese, and egg in a mixing bowl, using only the dry ingredients from the brownie mix.

Mix until well combined and the batter is thick.

Scoop the brownie batter into balls and place them onto a baking sheet lined with parchment paper.

Preheat the oven to the temperature specified on the brownie mix box (approximately 350°F).

Bake for 11-12 minutes or until the edges are set and the bottoms are fully cooked.

While the cookies bake, mix the peanut butter and powdered sugar until well combined. Form the mixture into small balls.

Once the cookies are baked and slightly cooled, press a peanut butter ball into the center of each cookie.

Melt the chocolate chips or Candiquik in the microwave, stir, and spoon over the peanut butter.
Notes:

Ensure the bottom of the cookie is fully cooked to support the weight of the peanut butter.

Do not overcook or undercook the cookies; they should be gooey but hold their shape.

These cookies can be frozen for later use.
