Buckeye Brownie Cookies (Print Version)

Ingredients:

01 - 1 box fudge brownie mix (19.5 ounce or family size).
02 - 1/4 cup butter, melted.
03 - 4 ounces cream cheese, softened.
04 - 1 large egg.
05 - 1 cup powdered sugar.
06 - 1 cup creamy peanut butter.
07 - 4 ounces semi-sweet chocolate chips.

Instructions:

01 - Combine the brownie mix, melted butter, softened cream cheese, and egg in a mixing bowl, using only the dry ingredients from the brownie mix.
02 - Mix until well combined and the batter is thick.
03 - Scoop the brownie batter into balls and place them onto a baking sheet lined with parchment paper.
04 - Preheat the oven to the temperature specified on the brownie mix box (approximately 350°F).
05 - Bake for 11-12 minutes or until the edges are set and the bottoms are fully cooked.
06 - While the cookies bake, mix the peanut butter and powdered sugar until well combined. Form the mixture into small balls.
07 - Once the cookies are baked and slightly cooled, press a peanut butter ball into the center of each cookie.
08 - Melt the chocolate chips or Candiquik in the microwave, stir, and spoon over the peanut butter.

Notes:

01 - Ensure the bottom of the cookie is fully cooked to support the weight of the peanut butter.
02 - Do not overcook or undercook the cookies; they should be gooey but hold their shape.
03 - These cookies can be frozen for later use.
