Crockpot Potato Soup (Print Version)
Ingredients:

8 slices bacon.

½ onion (diced).

2 pounds red potatoes (peeled and diced).

3 cloves garlic (minced).

½ teaspoon dried thyme (or 2 sprigs fresh).

1 teaspoon kosher salt.
07 -
½ teaspoon black pepper.

2 ½ cups chicken broth.

⅔ cup heavy cream.

1 teaspoon cornstarch.

1 cup cheddar cheese (shredded).

½ cup sour cream.
13 -
3 green onions (thinly sliced).
Instructions:

Cook bacon until crispy, set aside, and reserve the fat.

Sauté onion in bacon fat until softened.

In slow cooker, combine potatoes, garlic, thyme, salt, pepper, and chicken broth.

Cook on high for 4 hours or low for 6-8 hours until potatoes are tender.

Blend half the soup mixture with an immersion blender.

Mix heavy cream with cornstarch, add to the slow cooker with cheese, sour cream, and bacon.

Heat through on high for 15-20 minutes until thickened.
