Cowboy Meatloaf (Print Version)

Ingredients:

01 - 1 lb minced meat.
02 - 1 package cooled mashed potatoes.
03 - 1/3 cup rusk (bread crumbs).
04 - 1/2 large onion, chopped.
05 - 1/4 cup barbecue sauce.
06 - 1 large egg.
07 - 2 tbsp chili powder.
08 - 1 cup bacon bits.
09 - 1 cup Mexican cheese mix.
10 - Salt and pepper to taste.

Instructions:

01 - Preheat oven to 375°F (190°C).
02 - In a mixing bowl, combine the ground beef, chopped onion, bread crumbs, BBQ sauce, egg, chili powder, salt, and pepper. Mix well until fully blended.
03 - Place the meat mixture into a well-greased 9×9-inch baking dish.
04 - Bake in the preheated oven for 20 to 25 minutes or until the meatloaf is cooked through.
05 - Remove the dish from the oven and drain the excess fat.
06 - Prepare mashed potatoes according to package instructions.
07 - Spread the cooked mashed potatoes over the meatloaf mixture in the baking dish.
08 - Sprinkle the grated cheese and bacon bits evenly over the mashed potatoes.
09 - Turn the oven off and return the dish to the oven for a few minutes, or until the cheese is melted and bubbly.
10 - Serve and enjoy the delicious cowboy and potato dish!.
