Cowboy Meatloaf (Print Version)
Ingredients:

1 lb minced meat.

1 package cooled mashed potatoes.

1/3 cup rusk (bread crumbs).

1/2 large onion, chopped.

1/4 cup barbecue sauce.

1 large egg.

2 tbsp chili powder.

1 cup bacon bits.

1 cup Mexican cheese mix.

Salt and pepper to taste.
Instructions:

Preheat oven to 375°F (190°C).

In a mixing bowl, combine the ground beef, chopped onion, bread crumbs, BBQ sauce, egg, chili powder, salt, and pepper. Mix well until fully blended.

Place the meat mixture into a well-greased 9×9-inch baking dish.

Bake in the preheated oven for 20 to 25 minutes or until the meatloaf is cooked through.

Remove the dish from the oven and drain the excess fat.

Prepare mashed potatoes according to package instructions.

Spread the cooked mashed potatoes over the meatloaf mixture in the baking dish.

Sprinkle the grated cheese and bacon bits evenly over the mashed potatoes.

Turn the oven off and return the dish to the oven for a few minutes, or until the cheese is melted and bubbly.
