Classic Hibachi Chicken With Fried Rice And Vegetables (Print Version)
Ingredients:

1 pound chicken breast, cut into bite-size pieces.

2 cups cooked rice, preferably day-old.

1 cup mixed vegetables (carrots, peas, and corn).

2 large eggs, lightly beaten.

3 tablespoons soy sauce.
06 -
1 tablespoon sesame oil.

2 tablespoons vegetable oil, divided.
08 -
2 cloves garlic, minced.

Salt and pepper to taste.

Green onions and sesame seeds for garnish.
Instructions:

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden and fully cooked. Set aside.

In the same pan, add the remaining vegetable oil. Sauté the garlic and mixed vegetables until they are tender.

Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Stir until scrambled and fully cooked.

Add the cooked rice, chicken, soy sauce, and sesame oil to the pan. Stir well, allowing the rice to heat and crisp slightly.
