Classic Hibachi Chicken With Fried Rice And Vegetables (Print Version)

Ingredients:

01 - 1 pound chicken breast, cut into bite-size pieces.
02 - 2 cups cooked rice, preferably day-old.
03 - 1 cup mixed vegetables (carrots, peas, and corn).
04 - 2 large eggs, lightly beaten.
05 - 3 tablespoons soy sauce.
06 - 1 tablespoon sesame oil.
07 - 2 tablespoons vegetable oil, divided.
08 - 2 cloves garlic, minced.
09 - Salt and pepper to taste.
10 - Green onions and sesame seeds for garnish.

Instructions:

01 - Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden and fully cooked. Set aside.
02 - In the same pan, add the remaining vegetable oil. Sauté the garlic and mixed vegetables until they are tender.
03 - Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Stir until scrambled and fully cooked.
04 - Add the cooked rice, chicken, soy sauce, and sesame oil to the pan. Stir well, allowing the rice to heat and crisp slightly.
05 - Garnish with green onions and sesame seeds before serving.
