Comfort Food (Print Version)

Ingredients:

01 - 1 pound ground beef.
02 - 1 cup long grain rice.
03 - 1/2 yellow onion, diced.
04 - 1-2 cups shredded cheese.
05 - 2 cans (10 oz each) cream of mushroom soup.
06 - 1/2 cup sour cream.
07 - Salt and pepper, to taste.

Instructions:

01 - Cook the rice according to the package instructions until fully cooked. Set aside.
02 - Preheat your oven to 375°F (190°C).
03 - In a skillet over medium heat, cook the ground beef until it is browned and fully cooked, breaking it up into crumbles as it cooks. Drain any excess fat.
04 - In a large mixing bowl, combine the cream of mushroom soup and sour cream, stirring until smooth.
05 - Add the cooked rice, browned ground beef, and diced onion to the mixing bowl with the sauce. Stir until all ingredients are well combined.
06 - Season the mixture with salt and pepper to taste.
07 - Transfer the mixture to a greased baking dish, spreading it out evenly.
08 - Sprinkle the shredded cheese evenly over the top of the casserole.
09 - Bake in the preheated oven for 25 minutes, or until the cheese is fully melted and bubbly.
10 - Remove the casserole from the oven and let it rest for a few minutes before serving. Enjoy!.

Notes:

01 - This casserole pairs well with a simple green salad or steamed vegetables.
02 - You can add a layer of crushed Ritz crackers on top for an extra crunchy texture.
