Pulled Pork Casserole (Print Version)

Ingredients:

01 - 1 lb pulled pork.
02 - 1½ cup BBQ sauce.
03 - 1 (15-oz) can Ranch Style beans.
04 - 1 Tbsp chili powder.
05 - ½ tsp garlic powder.
06 - Salt and pepper to taste.
07 - 2 cups shredded cheddar cheese, divided.
08 - 1 (11.36-oz) package Red Lobster Cheddar Bay Biscuit mix.
09 - ¾ cup water.
10 - ¼ cup melted butter.

Instructions:

01 - Preheat oven to 425ºF. Spray a 9x13-inch baking dish with nonstick cooking spray.
02 - In a large bowl, combine pulled pork, barbecue sauce, chili powder, garlic powder, and Ranch beans. Season with kosher salt and black pepper to taste.
03 - Pour the pulled pork mixture in the bottom of a 9×13-inch casserole dish. Sprinkle 1½ cups of shredded cheddar cheese over the top of the casserole.
04 - In a medium bowl, prepare cheddar bay biscuit dough according to the package directions. Stir together biscuit mix, water, and ½ cup cheddar cheese. Save the seasoning packet for later.
05 - Using a small cookie scoop, scoop the biscuit batter over the top of the cheese. Using an offset spatula, spread biscuit dough over the pulled pork mixture.
06 - Bake for 15 minutes or until bubbly and the biscuits are golden brown.
07 - Combine melted butter and seasoning packet. Brush the biscuits with garlic butter and garnish with parsley.
