Cabbage Soup (Print Version)

Ingredients:

01 - 1 small head of cabbage, shredded.
02 - 2 carrots, diced.
03 - 2 celery stalks, diced.
04 - 1 onion, finely chopped.
05 - 3 cloves garlic, minced.
06 - 1 can (14 oz) diced tomatoes.
07 - 6 cups vegetable broth.
08 - 1 teaspoon dried thyme.
09 - 1 teaspoon dried oregano.
10 - Salt and pepper to taste.
11 - Fresh parsley for garnish (optional).

Instructions:

01 - In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until fragrant and translucent, about 3-4 minutes.
02 - Add carrots and celery, cook for another 3-4 minutes until slightly softened.
03 - Stir in the shredded cabbage, diced tomatoes (with juices), vegetable broth, dried thyme, and dried oregano. Season with salt and pepper to taste.
04 - Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the vegetables are tender.
05 - Taste and adjust seasoning if needed.
06 - Serve hot, garnished with fresh parsley if desired.
