Blt Pasta Salad (Print Version)

Ingredients:

01 - 8 oz rotini pasta.
02 - 1 lb bacon, cooked and crumbled.
03 - 2 cups cherry tomatoes, halved.
04 - 2 cups romaine lettuce, chopped.
05 - 1/2 red onion, finely chopped.
06 - 1 cup shredded cheddar cheese.
07 - 1/2 cup mayonnaise.
08 - 1/2 cup Greek yogurt.
09 - 2 tbsp lemon juice.
10 - 1 tbsp Dijon mustard.
11 - Salt and pepper to taste.

Instructions:

01 - Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
02 - In a large bowl, combine the cooked pasta, crumbled bacon, cherry tomatoes, romaine lettuce, red onion, and shredded cheddar cheese.
03 - In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until well combined.
04 - Pour the dressing over the pasta mixture and toss to coat evenly.
05 - Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
