Beef Enchilada (Print Version)

Ingredients:

01 - 1 lb ground beef.
02 - 1 small onion, finely chopped.
03 - 2 cloves garlic, minced.
04 - 10 oz red enchilada sauce.
05 - 4 oz diced green chilies.
06 - 15 oz black beans, drained and rinsed.
07 - 15 oz can corn, drained.
08 - 2 tsp chili powder.
09 - 1 tsp cumin.
10 - Salt and pepper to taste.
11 - 10 corn tortillas.
12 - 2 cups shredded Colby Jack cheese.
13 - Chopped fresh cilantro for garnish.

Instructions:

01 - Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
02 - In a skillet over medium heat, brown the ground beef. Add the chopped onion and minced garlic, cooking until they become tender.
03 - Mix in the red enchilada sauce, diced green chilies, black beans, corn, chili powder, cumin, salt, and pepper. Let it simmer for 5-7 minutes.
04 - Layer half of the corn tortillas on the bottom of the prepared baking dish.
05 - Spread half of the beef mixture over the tortillas.
06 - Sprinkle one cup of shredded cheese over the beef mixture.
07 - Repeat the layers with the remaining tortillas, beef mixture, and cheese.
08 - Cover the casserole with aluminum foil and bake for 20 minutes.
09 - Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
10 - Garnish with chopped cilantro before serving. Enjoy!.
