Beef Enchilada (Print Version)
Ingredients:

1 lb ground beef.

1 small onion, finely chopped.

2 cloves garlic, minced.

10 oz red enchilada sauce.

4 oz diced green chilies.

15 oz black beans, drained and rinsed.

15 oz can corn, drained.

2 tsp chili powder.

1 tsp cumin.

Salt and pepper to taste.

10 corn tortillas.

2 cups shredded Colby Jack cheese.

Chopped fresh cilantro for garnish.
Instructions:

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

In a skillet over medium heat, brown the ground beef. Add the chopped onion and minced garlic, cooking until they become tender.

Mix in the red enchilada sauce, diced green chilies, black beans, corn, chili powder, cumin, salt, and pepper. Let it simmer for 5-7 minutes.

Layer half of the corn tortillas on the bottom of the prepared baking dish.

Spread half of the beef mixture over the tortillas.

Sprinkle one cup of shredded cheese over the beef mixture.

Repeat the layers with the remaining tortillas, beef mixture, and cheese.

Cover the casserole with aluminum foil and bake for 20 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
