5-Ingredient Recipe (Print Version)

Ingredients:

01 - 3 cups shredded unsweetened coconut.
02 - 2 Tbsp maple syrup.
03 - 1/2 – 3/4 tsp peppermint extract (for best quality, use food-grade peppermint oil).
04 - 2 tsp coconut oil, divided.
05 - 1 cup vegan dark chocolate, chopped.

Instructions:

01 - Add shredded coconut to a food processor or high-speed blender. Blend until the coconut starts to form a paste. This should take about 45-60 seconds, scraping down the sides as needed. Continue processing in about 10-15 second increments until the texture feels like dough when squeezed between fingers. Be careful not to over-blend, as it can turn into coconut butter.
02 - Add maple syrup, peppermint extract, and 1 tsp melted coconut oil to the coconut mixture. Mix again until well incorporated. The mixture should now hold together better when tightly squeezed. If it doesn’t, you can add a tiny bit more maple syrup (or non-dairy milk) to help it bind.
03 - Scoop out an approximately 1-tablespoon amount of the mixture. Shape it with your hands to form a disc. Use your fingers to gently pat down the patties so they aren’t too tall. Lay the patties on a parchment-lined baking sheet or plate. Continue until all the coconut mixture is used, which should yield about 14 patties. Place the patties in the freezer to set for 10 minutes.
04 - Melt the chocolate and the remaining 1 tsp coconut oil over a double boiler or in the microwave in 30-second increments until melted. Individually place a chilled patty on the prongs of a fork to dip into the chocolate. Tap off any excess chocolate and set the patty back on the parchment. Continue until all the patties are coated.
05 - Place the chocolate-coated patties in the refrigerator or freezer to set for 8-10 minutes or until the chocolate is firm.
06 - Peel the patties away from the parchment and transfer them to a serving platter. Serve at room temperature or chilled. These patties will keep covered at room temperature for 3-4 days or in the freezer for up to 1 month. They are best when fresh.

Notes:

01 - These peppermint patties are not only delicious but also offer some health benefits, such as being rich in fiber (4 grams per patty) and containing 3 mg of iron per patty. They are perfect as a refreshing after-dinner dessert or as a snack.
