Add taco seasoning and chopped tomatoes with green chiles including their juice to the cooked beef. Stir thoroughly and simmer for 5 minutes, reducing liquid slightly.

In a mixing bowl, blend grated cheddar cheese with ranch dressing until evenly combined.

Add the seasoned beef mixture into the cheese and ranch blend. Mix uniformly.

Arrange phyllo cup shells on a parchment-lined baking tray. Fill each with approximately one tablespoon of the beef-cheese mixture.
