# Ingredients:

→ Salad

01 - 600 g watermelon, cubed
02 - 3 medium peaches, thinly sliced
03 - 20 fresh basil leaves
04 - 225 g fresh feta cheese, crumbled
05 - 35 g roasted pistachios, chopped

→ Vinaigrette

06 - 60 ml extra virgin olive oil
07 - 45 ml champagne vinegar
08 - 45 ml honey
09 - 15 g apricot preserves (optional)
10 - 2 tbsp fresh chives, finely chopped
11 - Sea salt, to taste
12 - Freshly ground black pepper, to taste
13 - Pinch of chili flakes

# Instructions:

01 - Arrange the cubed watermelon and peach wedges in a large serving bowl. Crumble the feta cheese evenly over the top, then scatter the basil leaves and chopped pistachios.
02 - In a small jar, combine extra virgin olive oil, champagne vinegar, honey, apricot preserves if using, and chopped chives. Season with sea salt, black pepper, and chili flakes. Shake or whisk thoroughly until emulsified.
03 - Drizzle the vinaigrette over the salad just before serving. Gently toss to combine, ensuring even distribution of dressing. Serve immediately.

01 - To intensify flavor, use perfectly ripe watermelon and peaches. Chill both fruit and cheese before assembling for a refreshing contrast.
