Sweet potatoes roasted with maple, walnuts, and creamy goat cheese for a savory, vibrant side.

# Ingredients:

→ Main Components

01 - 4 medium sweet potatoes, peeled and cut into 2 cm cubes
02 - 3 tablespoons extra virgin olive oil
03 - 60 milliliters pure maple syrup
04 - 1 teaspoon ground cinnamon
05 - Salt, to taste
06 - Freshly ground black pepper, to taste

→ Finishing Elements

07 - 100 grams walnuts, roughly chopped
08 - 110 grams goat cheese, crumbled
09 - Fresh flat-leaf parsley, finely chopped, for garnish

# Instructions:

01 - Set the oven to 200°C and allow it to preheat while preparing the ingredients.
02 - In a large mixing bowl, combine the cubed sweet potatoes, olive oil, maple syrup, ground cinnamon, salt, and pepper. Toss ingredients until the sweet potatoes are uniformly coated.
03 - Distribute the seasoned sweet potatoes evenly in a single layer on a baking sheet lined with parchment paper.
04 - Roast in the preheated oven for 20 minutes. After 20 minutes, gently stir the sweet potatoes to ensure even cooking.
05 - Sprinkle the chopped walnuts over the partially roasted sweet potatoes. Roast for an additional 10 minutes until the sweet potatoes are tender and the walnuts are lightly toasted.
06 - Remove the tray from the oven and immediately scatter the crumbled goat cheese over the hot sweet potato and walnut mixture, allowing it to soften from residual heat.
07 - Transfer to a serving platter, garnish with chopped fresh parsley, and serve while warm.

# Notes:

01 - To enhance texture and flavor, toast the walnuts briefly in a dry pan before adding to the sweet potatoes if desired.
